National Loaf Round 2
We went through two loaves of my Make Do National loaf recipe. You can see it here. This time I decided to make a more authentic National Loaf. I finally found Wholewheat (wholemeal) flour. I was surprised that the grocery store near me didn't have it. I still hadn't gotten the potato flour so I just replaced it with the wholewheat flour.
Adapted National Loaf Recipe 2
Ingredients:
700g whole meal flour
14g salt
475ml water
8g dry yeast
1tbsp oil
For Bread machine
Put in all wet ingredients.
Add all dry ingredients.
Make a small well in flour, put the yeast in the well.
Set machine to wholewheat.
Press start.
The resulting bread was a lot different than my original loaves. It was a lot denser, and grainier. The taste is very different as well. It has a very strong bitter, wheat taste. I gave a tester taste to the hubby and the grimace that he had was priceless. His response was "Now that is Hitler's secret weapon, that is what they were talking about."
After a couple slices, I got used to the more authentic national loaf. It isn't that bad. If one was used to white bread, I can see how the National loaf would be a shocker.
I was able to find potato flour. I bought a package on amazon. So next loaf will be the correct ingredients and a more authentic loaf. I will let you know how it goes.
